Homemade Mac & Cheese

I've been cooking and modifying lots of recipes lately to make them just the way I like them, so I decided I'll post some here :)

Ingredients:

Optional add ons:

Results:

Recipe:
1 box of macaroni or wagon wheels or whatever small pasta you like.
2 cups of grated old cheddar
2 tbsp of oil
pinch of salt
pinch of pepper
2 cups of milk
2 tbsp of butter
2 tbsp of flour

Optional:
Diced tomato
bread crumbs
Cayenne pepper

Directions:
Cook the pasta, drain, set aside.

Heat up the oil and butter in a saucepan, once its all melted and hot whisk in the flour slowly, stir until smooth.

Slowly add in the milk a bit at a time, whisking as you go, cook on low heat until the sauce starts to thicken, add salt and pepper (and cayenne if you want) to taste.
Once the sauce starts to get a bit thick, take it off the stove, let it cool down a couple minutes then mix 3/4 of the cheese in and stir until smooth.

Mix the cheese sauce and the pasta and pour into a casserole dish, add the tomatoes and breadcrumbs on top and some extra grated cheese.

Bake at 350 until it looks done.

I had the pleasure of doing my school internship and now working at Orange Retail Branding, a boutique branding agency run by the talented Susan Lee.

I have learnt so much from Sue and she has really become a mentor to me. Here is the video that we've been working on, an interview with Sue about her creative process. I am proud to say that I was involved right from the start, helping Sue with the art direction, the storyboards, and then editing and assembling the video. It was an awesome experience, a ton of fun and I am so pleased with the final product. Can't wait to do some more video work. A special thanks to Politique for the music!

This is a combo post, Szeto and Tom came to visit from Ottawa and that was awesome and their visit overlapped with a visit from Isabel and Vanessa from Montreal, which was also awesome. The drive was super long but a lot of fun. We drove pretty much straight (aside for a few hours of car camping here and there) until we hit the mountains. We stayed at a really cute and super cheap motel just outside Canmore. $49 for a hugeeee room with a queen bed, super nice owners, and rocky mountain views. I fully recommend this place for anyone making the drive. After Canmore we made our way through the mountains (stopping several times for avalanche cleanups) and then partied in Revelstoke for a night, thanks to Matty for being a great host. Every morning waking up here I feel so lucky. We have a tiny ocean view from our balcony and the beach is only a block away. Ocean, beach, mountains, and ships all in one view....there is nowhere I would rather be. Maymays is happy as can be and Charlie boy and I have been working our butts off getting the apartment set up. I have pictures from both the drive and of some of our MANY diy projects that we've been working on but I can't post them until we get our internet at home set up.But for now, here a few photos from my phone. The first two are from the drive, the last three are all Vancouver. Leaves on the trees and it's still only mid march makes up for all that damn rain.

I finally wrapped up a portfolio project that I've been working on for about a week, it was super fun to work on but WAY more time consuming than I initially anticipated. Anyways, I'm pretty stoked on the results.

My concept was to do a series of three print ads for the new cupcake shop in my neighborhood, but instead of just changing the visual concept and headline for each, I thought as a change I would keep the imagery and the headline exactly the same for each, but instead change the method used to create the images. I did one paper craft, one plasticine, and one photograph. I really wanted to make the photo one tilt shift style, but I couldn't get high enough to take the photo as I would have needed to do it successfully. Oh well, I'm still happy with how it turned out.

Tonight I was supposed to work on this request for proposal that I have to do for my english class but since it was so dreadfully boring I decided to play around on photoshop (of course). I'm working out a concept in my head for a series of three print ads each created through a different medium...more on that later, but the point for now is that I wanted to learn the technique on photoshop of making things look miniature. I practiced with a few different photos, but this one of a tiny fishing village outside of Leon was my favorite. I'd love to be able to practice this technique in camera instead of photoshop, but tilt shift lenses are monstrously expensive, soooo no dice.

Also, although I didn't make it, I highly recommend checking out this adorable little tilt shift video! Eeep! So cute.

I have actually managed to go to the gym five out of seven days.

I officially gave up my bedroom at my current house as of March 1st.

I think I've found the perfect apartment in Vancouver for Charlie and I.

I've missed Charlie like crazy, but still managed to have a great time catching up with old friends.

I applied for lots of part time jobs in Ottawa, but haven't had any luck yet.

Today is nine months since Charlie and I started dating, and I must admit, it's been the best nine months of my life. <3

So it's a few days late, nbd.

New years was great, went on a date with the love of my life, stayed in, watched a movie, and hung out. Going to breakfast New Years day NOT hungover was refreshing haha.

The first few days of the year were awesome, spent lots of time with Charlie boy before he left for Asia. I dropped him off at the airport yesterday morning and had to say goodbye for a whopping 56 days apart. It's been two days, he's still on an airplane, almost in thailand, and I already miss him. Man, what this boy does to me.

The next two months will be filled with me being as productive as I can be, and staying distracted as I can be.

I will fill my days with the gym, school, apartment hunting, hopefully working lots (still looking for a part time job), internship hunting, and crafts, also spending NO money. I'm on a major budget.

The boy left for Miami today, I'm here for two more torturous weeks of school with a million projects to do before I fly to Tampa to meet him, then we're going to Nicaragua for a bit (best Christmas present ever) then back to Florida. I am so unbelievably excited for Nicaragua and to get out of this gross snowy weather, but at the same time I'm a little worried about how much I'll miss my parents over Christmas. I'm 25 and this is my first Christmas apart from my family, it's bound to happen sooner or later and I'll get to see them lots before I leave/once I get back, but still, I'll def miss my family's Christmas day traditions. On another note, I am stoked to spend my first of many Christmas holidays with Charlie boy. He's leaving for Asia a few days after we get home from Florida, so I'm so stoked we get to see each other three weeks straight before he's gone for 2 months. It blows my mind to think about how we're moving to Vancouver days after he's back from Asia. As of today when he left, he's not going to be in Ottawa more than a few days at a time until we move. Our Ottawa life and routines together will be replaced with adventures and a new life together in Vancouver. Can't wait, but in the mean time, I'll be missing that boy like crazy over the next two weeks.

I've been really bad about my blog lately because I've been too busy with other things! I've been spending tons of time outside and I've been going on lots of adventures, and working lots of weddings. I'm actually fairly disappointed in myself for how few pictures I've been taking that aren't for work, I did however take a few photos 2 Sundays ago when Charlie and I went fishing, here are a few of those. I went fishing again this sunday but my camera batteries were dead from the wedding I worked saturday, so I didn't bring it. Just my luck, that was the day I caught a 4 or 5 lb pike!!! Biggest fish I ever caught. I had my p&s camera though so at least I have proof...I'll post it later.

Instead of the usual get drunk downtown Canada day routine, Charlie and I decided to go camping in Algonquin Park. We forgot TONS of essentials, had to canoe against a crazy strong current to get into our water access only camp spot, and got eaten by mosquitos, but it was still the best Canada day I've had yet. My first attempt at taking skateboarding photos. Charlie and I went to this awesome rock formation to hangout and shoot a bit. I'm pretty happy with the results considering it's my very first attempt (I am usually shooting weddings and my drunk friends and this is completely different). It was hot and humid and even while wearing a flannel in that weather, Charlie killed it.

Technical stuff:
Lighting conditions were tough because the sun had set behind the trees and there was only backlight. I bounced my flash off a ripped up envelope I found in my purse but even at full power I had to crank my iso higher than I would have liked. It probably would have been smart for me to be less stubborn about keeping my aperture narrow and just shot at f3.5 since the light sucked, but I really wanted to keep the detail of the rocks and the sky in focus.

Home from Florida, it's nice to be back but the entire vacation was amazing. Charlie's mum was amazing to us the whole time, cooked amazing meals and arranged for us to pet dolphins, Don made us the best pulled pork I've ever had, and Charlie and I went on a fuck load of adventures.

I had a fantastic day today, woke up late and counted freckles for a bit this morning, made a huge breakfast and then took a nice drive out to Constance Bay with three rad ladies.

Life is great these days; the break from school rules, my friends are fantastic, and I have the best boyfriend in the world.

Leaving for Florida mini-vacation in just over a week. Cannot wait.

Sooo, Friday was laid back but hilarious hangs at Lauren's new place, today Khala and I went to giant tiger (rules) and watched the descent part two and were hilarious all day, seriously I feel like we've never made so many jokes. Laughing all day feels amazing. Home early tonight because tomorrow is mama's day and Charlie gets back from his trip. Stoked. Anyways, here are pictures from the weekend.

Brittany and I had the same day off, so we started our day off right by making a huge breakfast and then spent the day walking around outside and hanging out by the canal, it was nice.
