Homemade Mac & Cheese

I've been cooking and modifying lots of recipes lately to make them just the way I like them, so I decided I'll post some here :)

Ingredients:

Results:
Homemade mac & cheese

Recipe:
1 box of macaroni or wagon wheels or whatever small pasta you like.
2 cups of grated old cheddar
2 tbsp of oil
pinch of salt
pinch of pepper
2 cups of milk
2 tbsp of butter
2 tbsp of flour

Optional:
Diced tomato
bread crumbs
Cayenne pepper

Directions:
Cook the pasta, drain, set aside.

Heat up the oil and butter in a saucepan, once its all melted and hot whisk in the flour slowly, stir until smooth.

Slowly add in the milk a bit at a time, whisking as you go, cook on low heat until the sauce starts to thicken, add salt and pepper (and cayenne if you want) to taste.
Once the sauce starts to get a bit thick, take it off the stove, let it cool down a couple minutes then mix 3/4 of the cheese in and stir until smooth.

Mix the cheese sauce and the pasta and pour into a casserole dish, add the tomatoes and breadcrumbs on top and some extra grated cheese.

Bake at 350 until it looks done.
